Dinner a la Ina Garten

While I get most of my dinner recipes from Pinterest, I still love making my way through a cookbook and having it propped up in the kitchen, with small stains of olive oil and melted chocolate. I’ve shared before that my mom and I are (slowly) going through Julia Child’s cookbook (have a few more recipes I need to post!), but another favorite chef of ours is Ina Garten. I first got her Foolproof book as a Christmas gift last year and I have to say, it has some of my favorite recipes (here, here, and here). Her new book Make It Ahead came out about a month ago, and I’ve already been able to try out a couple of dishes from this book. My mom is also an Ina Garten fan (she’s the one who got me these books in the first place) so while we were in Tucson for Thanksgiving, I convinced her to do an Ina themed dinner together, complete with a class white button down and red scarf to match the cover of Make It Ahead. We had a blast and Chip and my dad definitely enjoyed the food. For now, I think Foolproof is my favorite of these two cookbooks, but I know I’ll be using plenty from Make It Ahead.

We chose an appetizer and main dish from Foolproof and our dessert from Make It Ahead. Recipes are posted at the end, along with some pictures from Thanksgiving!

Tomato Crostini with Whipped Feta – From Foolproof

Ingredients:

  • 6 ounces good feta, crumbled
  • 2 ounces cream cheese, at room temperature
  • 2/3 cup good olive oil, divided
  • 2 tablespoons freshly squeezed lemon juice
  • Kosher salt and freshly ground black epper
  • 2 tablespoons minced shallots (2 shallots)
  • 2 teaspoons minced garlic (2 cloves)
  • 2 tablespoons good red wine venigar
  • 2 pounds ripe heirlooms or cherry tomatoes, 1/2 inch diced
  • 3 tablespoons julienned fresh basil leaves, plus extra for serving (we unfortunately bought some bad basil, so we had to skip this part)
  • 20 to 25 (1/2 inch thick) diagonal baguette slices, toasted
  • 2 tablespoons tasted pine nuts

Directions:

  • For the whipped feta, place the feta and cream cheese in the bowl of a food processor fitted with the steel blade. Pulse until the cheeses are mixed. Add 1/3 cup of the olive oil, the lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper and process until smooth.
  • For the tomatoes, up to an hour before you’re serving, combine the shallots, garlic, and venigar in a medium bowl. Set aside for 5 minutes. Whisk in the remaining 1/3 cup olive oil, 1 teaspoon salt, and 1/2 teaspoon pepper. Add the tomatoes, stir gently, and set aside for 10 minutes. Stir inthe basil and taste for seasnonings.
  • To assemble the crostini, spread each slice of bread with a generous amount of whipped feta. With a slotted spoon, place the tomatoes on top. Put the crostini on plates and scatter with the pine nuts. Sprinkle with extra basil and serve.

Lobster Mac and Cheese – From Foolproof

Ingredients:

  • 2 tablespoons vegetable oil
  • Kosher salt
  • 1 pound elbow macaroni
  • 1 quart whole milk
  • 8 tablespoons (1 stick) unsalted butter, dividied
  • 1/2 cup all-purpose flour
  • 4 cups grated Gruyere cheese (12 ounces)
  • 2 cups grated extra-sharp Cheddar (8 ounces)
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon ground nutmeg
  • 1 1/2 pounds cooked lobster meat, 1/2 inch diced
  • 1 1 /2 cups fresh white bread crumbs (we used wheat bread) (5 slices, crusts removed)

Directions:

  • Preheat the oven to 375 degrees.
  • Add the oil to a large pot of boiling salted water, add the pasta, and cook al dente according the directions on the package. Drain well.
  • Heat the milk in a saucepan, but don’t allow it to boil. In the large pot, melt 6 tablespoons of the butter and add the flour. Cook over low heat for 2 minutes, stirring constantly with a whisk. Still whisking, add the hot milk and cook for 1 to 2 minutes, until thickened and smooth. Off the heat, add the Gruyere, Cheddar, 1 tabelspoon salt, the pepper, and nutmeg and stir until the cheese melts. Stir in the cooked pasta and lobster. Pile the mixture into 6 to 8 (2-cup) gratin dsihes (we didn’t have these, so we just split it into two dishes).
  • Melt the remaining 2 tabelspoons of butter, combine with the bread crumbsm and sprinkle on top. Bake for 30 to 35 minutes, until the sauce is bubbly and the pasta is browned on top.

Fresh Apple Spice Cake – From Make It Ahead

Ingredients:

  • 1 cup chopped pecans
  • 1/2 cup dark rum
  • 1 cup golden raisins
  • 1 cup granulated sugar
  • 1 cup dark brown sugar, lightly packed
  • 3 extra-large eggs, at room temperature
  • 3/4 cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 2 teaspoons grated orange zest  (2 oranges)
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1 1/2 pounds Granny Smith apples, peeled, cored, and 1/2-inch-diced (3 to 4 apples)
  • Vanilla ice ceram
  • Caramel sauce

Directions:

  • Preheat the oven to 350 degrees. Grease and flour a 9×13 baking pan.
  • Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and rasinins in a mslal bowl, cover with plastic wrap, and microwave for 60 seconds. set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bolw. With the mixer on lowl, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the rasins, pecans, and apples into the batter. Spread in thte prepared pan and msooth the top.
  • Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scooop of vanilla ice cream and a drizzle of warm caramel sauce.

Thankful For: Home

Or rather, I’m thankful for who I share my home with. We may always have projects that we want to do around the house and don’t even get me started on how we could always clean/vacuum/dust, but as long as I have Chip and Wrigley, I’m happy. I don’t mean to be overly mushy, but it’s the truth. Those two boys may drive me crazy sometimes, but I can’t imagine what my daily life would look like without them.

 I am so thankful that I married my best friend. That he can make me laugh easier than anyone else can. That he can help me overcome my fears and weaknesses and is my number one supporter. That he works so hard for us. That we can serve alongside each other.

You all know how much I love our pup. He can be a downright conniving pest (many of you have seen him try to steal food while we pray before a meal), but I am so grateful for the joy he brings in our life. There’s nothing better than coming home to his excited face ready to lick us and throw himself in our laps for a belly rub.

Thankful For: Community

Over the past year, I have become extremely thankful for the community we have here in San Antonio. As I’ve mentioned before, we don’t have any family in town, but we have been extremely blessed with friendships strong enough to feel as if we were family.

I am so thankful for the community we have at Redeemer. For the wonderful women in my Bible study and how they prayed for me as I made the decision to leave my job. For our fun community group and the ways they encourage us as a couple as well as individually. For our youth group and all the ways they make me laugh and grow. For all of the sweet friendships we’ve developed with so many different people and families. We know our life here in San Antonio wouldn’t be the same without them.

I am also very thankful for the community I developed in my years at Bromley. While working alongside some truly talented people, I was able to make some wonderful friends that could make even the longest meetings more fun (trust me, that’s no small task!).

Happy Thanksgiving, everyone! What are you thankful for today?

Thankful For: Music

If there’s one thing that can instantly impact my mood (besides a giant piece of dark chocolate), it’s music. I love how music can make me want to dance, to rest, to cry, to sing along in an obnoxiously loud voice in my car. Music can comfort me and encourage me. It doesn’t matter the kind of music, I just about love it all. I grew up playing the piano and will always appreciate classical music. My inner teenager never grew up, so I can’t resist catchy pop songs (I’m looking at you, TSwift). Car rides with my dad taught me to love Van Halen, while my mom plays Michael Buble. This past month has been wonderful with the constant Christmas music on my Pandora and Spotify stations.

It isn’t very profound, but today, I’m thankful for music and all of the memories it recalls and emotions it creates.

Thankful For: Travel

As I mentioned yesterday, I’m trying to take time this week to consciously consider what I am thankful for and share it with you all. I would also love to hear from you on what you’re reflecting on this week, so please share in the comments!

When I first thought about what I’m thankful for, I realized how much is equipped by travel. This thankfulness works two fold: on the one hand, it allows us to see friends and family that live outside of the great state of Texas, and on the other hand also lets us to see new places for the first time, which is something we really enjoy.

Sometimes it can be really hard not having family in town or having some of our good friends live so far away. If we weren’t able to hop on a plane or get in a car for a road trip, there is so much that we would miss out on in the lives of those we love. I’m grateful that this year we have traveled far more than we had ever anticipated. It allowed us to go to our friends’ wedding in Nashville and be part of their special day. We were able to attend my brother’s college graduation which was so wonderful to see. We were able to go to Rochester for my cousin Denisse’s daughter’s baptism, which meant meeting precious little Daniella and getting to spend time with my goddaughter Isabella. We were able to share sweet time with my family during trips to Boston and Maine. Chip and I were able to explore Nantucket and San Francisco on our own during work and anniversary trips. Just this past weekend we were able to go to Denver to visit my brother as well as one of my closest college friends (stay tuned for a post on that trip!). I’m thankful that we live in a time where travel is as advanced as it is; let’s be real, if we were still in the Oregon trail days, we really wouldn’t be able to see anyone past Boerne.

Thankful

It’s here, folks. Thanksgiving week! It’s finally feeling like fall here in San Antonio so I am more than ready to kick off the holidays.

I saw this quote on Pinterest recently and it made me realize that I don’t spend hardly enough time thanking God for all the blessings He provides. Hard lessons, sweet friends, times of rest, times of joy, a crazy dog, a supportive husband, a messy house. This week, I am hoping to do a post everyday with something I am thankful for and I encourage you to do the same. We shouldn’t just rely on Thursday’s dinner to quickly share what we’re thankful for, but be in constant reflection.

Happy Thanksgiving!

Hope everyone had a great Thanksgiving! Chip and I went down to Corpus to celebrate the holiday with his mom Sue, stepdad Don and brother Dale. To prep for Thursday’s big meal, we spent Wednesday afternoon and evening doing some baking; by the end of the night, we had our green bean casserole, pumpkin pie and chocolate pecan pie ready to go! We left Wrigley here in San Antonio at Lucy’s Doggy Day Care for some dog socializing. We don’t go to the dog park as often as we would like, so it’s really good for Wrigley to be boarded every now and then to wear out his energy and have some bigger dogs put him in his place.

We drove down to Corpus Thursday morning and got in by lunch time. We had a great time hanging out with Dale and catching up with Don and Sue on how they’ve all been doing. The best part of the day was doing a gingerbread decorating contest with some kits Chip’s mom got for us. So while she worked on some more of the cooking and final turkey preparations, the three of us set up our kits at the dining table, keeping in mind that a $10 itunes gift card would be given to the winner of the best creation. Chip and I each got a train set to decorate while Dale got a pretty complex gingerbread village. While some of the instructions weren’t very clear, we were all able to put our pieces together and do some decorating.

In the end, we were all declared winners and each received an itunes gift card.

Once we cleared the table of all gingerbread pieces, frosting and candy we got the table set for Thanksgiving. There was plenty of good food to go around! We were all pretty full after eating, so we spent the afternoon relaxing and watching the Cowboys game (maybe not the best way to relax… :)).

Dale has been working at WalMart for about a year now and had to do the black Friday shift. This meant being at work at 7:30 on Thanksgiving evening, which was a bit of a downer. Since we wanted to spend some more time with him, we decided it would be fun to stop by the store at some point to see him in action. Little did we know that it would be madness trying to find him! I know people take their Black Friday shopping seriously, but we really didn’t expect this many people would be cutting into their Thanksgiving family time to go do some shopping. WalMart was so crowded that we were barely able to find Dale. We’re glad we did and felt pretty proud watching him answer so many questions about different game systems!

Walmart was pretty exhausting (have no idea how Dale managed his shift until 4AM!) so we called it a night when we got back to Chip’s mom’s house afterwards. We are very thankful for her hosting us and for organizing Thanksgiving dinner!
